Hayu has turned fish and chips into a luxury ‘down under’ experience for Sydneysiders to mark the launch of the brand new Below Deck Down Under series, streaming exclusively on the platform from March 18.
To create the dish, hayu partnered with love.fish – the Australian waterfront venue that is best known for its sustainably sourced Australian seafood. The dish has been carefully curated by their head chef and owner Michael Milkovic and includes: Glacier 51 Patagonian Toothfish and Eastern Rock Lobster in Belvedere Single Grain Vodka Crisp Batter and a side of Thorpdale Sebago Chips with Black Spanish Winter Truffles, topped with Hadid Royal Oscietra Caviar (launched by Gigi and Bella Hadid’s father, Mohamed Hadid), dusted in Giusto Manetti Gold Leaf and served with a side of Cristal champagne dipping sauce.

Below Deck Down Under is set against the backdrop of the tropical Whitsunday Islands and world-famous Great Barrier Reef in QLD, Australia. The series explores the complex, often explosive dynamics of the crew and a rotating group of demanding charter guests.
This season features Australian cast members Captain Jason Chambers, bosun Jamie Sayed, and deckhand Ben Crawley. They are joined by NZ-raised Aesha Scott as chief stew, along with chef Ryan McKeown, stews Tumi Mhlongo and Magda Ziomek, and deckhands Culver Bradbury and Brittini Burton.
